Is all 100% extra virgin olive oil the same? I once thought so. Now, I know better! I was so accustomed to buying a BOGO offer at my local grocer for the amount of EVOO I use that I was not thinking about how upgrading or changing brands could change the flavor of my food! The robust flavor of artichoke and almond with a medium bitter and spicy aftertaste, as well as a green, ripe, fruity aroma with a leafy feel. The 100% Italian Extra Virgin Olive Oil used in this recipe retails for $19.99 for a 500 mL bottle. It is worth it! It is vegan, gluten free and contains no additives or preservatives!

As you will see the coloration of the brie used, I bake at 350 F and the smoking point of this EVOO is 400 F. It is suitable for both cooking and baking. EVOO is one of the best healthy fats you can use in any diet including low carb and keto. This recipe is fairly low carb if you ditch the pasta! Use it as a dip!
Easy Baked Brie with Tomatoes

A creamy topping to any pasta that creates a filling dish the whole family will crave! Without pasta you can use it as a dip!
Ingredients
- 1lb of pasta (angel hair, egg noodles, spaghetti are best)
- 1 large round of fresh Brie
- 2 pints grape tomatoes
- 1/2 cup EVOO (100% extra virgin olive oil)
- 2 tbsp minced garlic
- Thyme to taste
- Salt to taste
- Pepper to taste
Instructions
- Preheat oven to 350
- Boil and prepare to cook pasta on stove
- In a round or square pan place your Brie in center, slice 6 ways halfway through.
- Slice into halves, grape tomatoes and place around the Brie.
- Pour your EVOO all over the dish
- Sprinkle minced garlic evenly over the dish
- Sprinkle your thyme, salt and pepper to taste
- Place in over for 35 minutes
- Once noodles are done, drain and place in large bowl or back in pot.
- Carefully remove baked Brie and pour over pasta, stir in and enjoy!

This dish may not be the prettiest, but it certainly is a hit with kids and adults alike!
