Is all 100% extra virgin olive oil the same? I once thought so. Now, I know better! I was so accustomed to buying a BOGO offer at my local grocer for the amount of EVOO I use that I was not thinking about how upgrading or changing brands could change the flavor of my food! This was my first time using Le Stagioni d’ Italia. They take great pride in bringing authentic Italian foods from seed to shelf. They select seeds, harvest crops, and package their products in their state-of-the-art production facilities in Northen Italy.
The 100% Italian Extra Virgin Olive Oil is the first cold pressed olive oil from the first round of extraction of fresh, intact olives—it has not been heated during processing, so it retains its full nutritional value. The robust flavor of artichoke and almond with a medium bitter and spicy aftertaste, as well as a green, ripe, fruity aroma with a leafy feel. The 100% Italian Extra Virgin Olive Oil used in this recipe retails for $19.99 for a 500 mL bottle. It is worth it! It is vegan, gluten free and contains no additives or preservatives!
As you will see the coloration of the brie used, I bake at 350 F and the smoking point of this EVOO is 400 F. It is suitable for both cooking and baking. EVOO is one of the best healthy fats you can use in any diet including low carb and keto. This recipe is fairly low carb if you ditch the pasta! Use it as a dip!

We specifically encourage you to try Le Stagioni d' Italia as your 100% Extra Virgin Olive Oil as the taste is amazing!
Some helpful tips when using 100% Extra Virgin Olive Oil to cook:
Experiment with different oils for different occasions. Try something different for pasta vs what you select for your dipping breads.
Use delicate oils for salad dressings or as a condiment over mild foods, like vegetables, fish, eggs, or potatoes.
Pair robust oils with hearty foods that can stand up to the intense flavor like steak or spicy soup.
With a high smoking point of 400F extra virgin oil is suitable for cooking and can enhance any dish by drizzling on as a finisher.
This dish may not be the prettiest, but it certainly is a hit with kids and adults alike! The product we used thanks to Moms Meet really amped up the normal dish, yes, I can taste the difference of a $7 bottle vs this! I will save this for special meals and this dish (as it is a favorite and makes amazing leftovers!!!!) I hope your family enjoys it as much as us!
